Recipe Autumn apple and blueberry crumble

It’s no secret that I have a bit of a sweet tooth and I can inhale a tonne or two of chocolate on any given day, but I only make real deserts in the colder months. We love a good stodgy pud, real school dinner stuff – sticky toffee pudding, jam roly poly, spotted dick ( high-five if you giggled ), and of course a scrummy crumble.

I never follow a recipe for crumble as I like to make what ever we have left in the fruit bowl in to a compote and smother it with a generous topping of crumbly goodness.

 

Here is my recipe for apple and blueberry crumble

 

Ingredients 

Fruit compote 

600g blueberries ( I freeze mine before use and add to pan frozen )

1 Bramley apple

3 eating apples

1 tsp cinnamon

1 tbl spn soft brown sugar

zest of 1 small lemon

juice of 1/2 a small lemon

 

Topping

240g plain flour

120g butter ( I use salted as I like the flavour ) * room temperature

120g of soft brown sugar

 

 

Method

To make the compote

Start by peeling, coring and dicing the apples. Add them to a sauce pan with the sugar, lemon zest, cinnamon and a little splash of water heat on low until the apples begin to soften, then add in the blueberries and lemon juice and continue to cook on low until the apples are knife tender and before the blueberries lose their shape.

Using a slotted spoon, transfer the fruit to your pie dish – I use the slotted spoon so that I don’t  get too much juice into the crumble ( still juicy though ).

 

To make the crumble topping 

Pour flour & sugar in to a large mixing bowl and stir to combine, add the butter ( room temp remember ) and rub between your finger tips until it resembles a course crumb.

Generously cover the compote with the crumb topping and *sprinkle with a little extra castor sugar and cinnamon ( * optional ).

Bake on 180* fan, for approx 30-35 minutes, but be sure to keep an eye on it as all ovens vary and you do not want the top to burn.

When cooked, your crumble will be light golden brown and the fruit juices will have bubbled up around the outside.

Serve warm with cream or custard.
