It’s Friday, and that means it’s recipe time.
As you all know by now, I love to cook. There are times at the weekend when I want to spend hours in and out of the kitchen preparing stews & casseroles or baking some yummy cupcakes or biscuits, but during the week, I just want simplicity, speed and satisfaction in knowing that I’ve cooked up something that the whole family will love and took absolutely no time to knock up.
This weeks offering is my super speedy, cheats paella.
It really is the work of minutes, but it’s so damn good, that even the youngest shovels it in.
What you need:
1 mug Basmati rice ( any mug, as long as you use the same one throughout)
1 red pepper
1 onion
1 chorizo sausage
A handful of spinach
Paprika ( I use smoked )
Prawns 370g ( the amount really is up to you, I use Aldi frozen raw tiger prawns usually, but I had large cooked prawns defrosted in the fridge so I used them instead )
What you do:
Start by wiping a pan with a tiny bit of oil, if your pan is non stick then leave out that part.
Add the sliced chorizo to the pan and cook for a few minutes, then add in the onion and pepper and cook until softened.
Pour in the cooked prawns and cook until hot.
Add in your mug of basmati rice and stir around in the pan until well coated.
Sprinkle over a good tea-spoon of the paprika and stir in.
Throw in the spinach and give everything a good mix.
Pour in 2 cups ( same cup as used for the rice ) of fresh kettle boiled water.
Stir well, place a disc of damp parchment-paper on the top. ( run paper under water and squeeze out excess before putting on the pan)
Cook in a 200* oven for 10 minutes ( if it’s still too watery, pop it back in without the parchment cover, for just a few more minutes ).
Heap into bowls and chow down.
You will not regret making this one.

OMG this looks seriously amazing! I’m totally cooking it this week ๐ (if I can get chorizo that is – it required a special trip to a special shop in the Middle East…)
