Hey guys!
So making fudge seems like the easiest thing to knock up, right?
Wrong!
I have never been able to make it.
I don’t know where I’ve been going wrong exactly, but it’s been driving me crazy.
I’ve had a good look on the web, and came across the Nestle Carnation website, and a fudge recipe using their condensed mil, so I thought I’d give it a go.
What you need:
1 x 397g can of condensed milk
150 mls milk
2 tbl spn Amaretto
450g Demerara sugar
115g butter
A sugar thermometer
20cm lined baking tin
Surely even I can’t cock this up!
What you do:
Put all of the ingredients in to a heavy based saucepan.
Melt over a low heat until the sugar dissolves.
Bring mixture to the boil, and then simmer for 10-15 minutes, stirring continuously and scraping the base of the pan – [you must scrape the pan, I didn’t and it burnt, I had to switch pans and had little caramelised bits running through my fudge, luckily it tasted fine.]
*take care at this stage, the fudge is extremely hot.
Bring fudge mixture up to 118* ( or drop a little piece in to ice-cold water and it should form a soft ball).
Remove fudge from the heat, and beat until very thick and starting to set ( about 10 mins).
Pour into prepared tin and allow to cool completely before cutting into squares.
The finished article was so good, that didn’t last long at all.
It took longer than expected before it reached temperature, and the mixing nearly broke me ( my husband stepped in at this point and saved me ), but the end result was totally worth it.
